How to make a vegan frangipane galette des rois?
Being vegan and enjoying a galette des rois is absolutely not incompatible! If the traditional frangipane galette des rois contains eggs and butter in particular, it is quite possible to replace them with other vegetable ingredients to concoct a delicious vegan frangipane. Swap the butter for margarine and the eggs for almond puree. You will obtain a royal frangipane that is well scented and delicious. If your recipe contains milk, simply replace it with vegetable milk. We advise you to choose almond milk to increase the aromatic power of your frangipane.
For puff pastry, you just have to swap the butter for margarine. This vegetable fat will do just fine and your puff pastry will be just as crispy and delicious as the classic version with butter. However, opt for a firm margarine and not a spreadable one that would be too soft and difficult to work with. For homemade vegan puff pastry, you will then need to mix 400 g of flour with 8 g of salt and 220 g of water to form a ball and then you will only have to perform the same technique as the puff pastry. classic but using 325 g of firm margarine.
If you don't want to start making vegan puff pastry at home, you can easily find it on the market. Then, you garnish it with vegan frangipane and voila! Even if you don't fall for the bean this year, you will inevitably be crowned with this vegan frangipane galette des rois.
