After the holidays, the Boulay pastry shop, located in Saint-Nazaire, tackles the galette des Rois, to the delight of fans of classic recipes, sublimated in the kitchen by Joël Boulay.
West-France Julia MAZ-LOUMIDES. Published onAfter passing through the United States and working alongside pastry chef Gaston Lenôtre, Joël Boulay settled in Saint-Nazaire with his wife, Anne Boulay. For twenty-two years, their shop, avenue de la République, has been attracting customers from all over the peninsula who come to get their "childhood cakes": flan, lemon meringue pie, chocolate macaroon, golden straw... In the colorful showcases, his "good foundations", as he calls them, are torn off on a daily basis. But in this month of January, the star of the kitchen is the galette des Rois.
