Discover Philippe Etchebest's ultra-simple lump-free pancake batter recipe
If we had to choose only one thing to eat for the rest of our lives, it would definitely be pancakes. Salty, with spread, honey jam, plain, in short with any garnish, they know how to delight our taste buds. For afternoon tea, Candlemas, and brunch, pancakes are the guests of choice! But no matter how much we love to eat them, it happens that our pancake batter is not always very successful. Too thick or with lumps, there are many reasons why our batter does not make pancakes as delicious as expected. Anyway, that was before chef Philippe Etchebest got involved and gave us recipes and tips to never miss his pancake batter again.

It was on his YouTube channel that Philippe Etchebest revealed all the ingredients for a perfectly successful pancake batter! Watching him do it, our mouths were clearly watering. So we put on our most beautiful apron, and we go to the kitchen to prepare these little sweets!
Utensils :
- a kitchen scale
- a chicken ass
- a measuring cup
- a whip
- a crepe pan (or crepe maker)
Ingredients for 6 people:
- 40 g of butter
- 4 eggs
- 250g of flour
- 40 g caster sugar
- 60 cl of milk
- 1 tbsp. tablespoon orange blossom water (or rum, Grand Marnier, etc.)
The preparation :
- Melt the butter over low heat
- Pour the flour, eggs, sugar, a small pinch of salt and start stirring from the center.
- Add the milk little by little at the same time as the material thickens
- Add the butter, and continue to mix in the center
- Add the end of your milk and mix your preparation vigorously
- In case of lumps, use a small electric mixer to make them disappear
- Add your alcohol or orange blossom
- Let the dough rest for at least 45 minutes
- Make your pancakes
- Treat yourself !
